Is one emerald always worth the same grocery bag?
You stand at a farmer villager, hand over one emerald, and walk away with bread. Hand the same emerald to a butcher and you walk away with chicken. Price those bags at a U.S. grocery store and the dollars jump.

One emerald is not one grocery bag
You open the villager’s trade screen and see the same emerald icon on every row. The food on the other side is not the same.
I wanted to know whether that green gem meant one grocery value, so I priced the bags. Six loaves of bread for one emerald lands around $0.70 at the U.S. grocery stand-ins I use. Eight cooked chickens for one emerald lands around $6.30.
That is the same emerald. The chicken bag is nearly nine times the bread bag.
Picture it at a real store. One path is a small stack of sliced bread. The other is a family pack of cooked chicken. Minecraft charges one gem for both.

Golden carrots sit at the cheap end
Chicken is the expensive bag. Golden carrots sit at the other end. Three golden carrots for one emerald prices out around $0.12 in this grocery window, because I only count the carrot. I ignore the gold.
That is pocket change next to the chicken path. Five cooked porkchops land around $4.06, closer to chicken than to bread. Eighteen cookies land around $0.85, almost the same grocery money as six loaves.
So the gem does not carry a hidden dollar rate. The food does. Pick the trade, not a single “emerald equals X dollars” rule.
How I calculated it
Java base villager food trades (wiki tables; no Hero-of-the-Village, no demand inflation). Grocery $ = food count × U.S. grocery stand-in from What does a villager food trade cost in real grocery money? Dollars per emerald = grocery $ of that bag (one emerald in, food out).
